Bless the Cook -- Comfort Food

 

I hail from a large Italian American family -- seven brothers and sisters -- we grew up in a loud, busy family with two parents who both loved to cook.  After our dinner prayer my father would always kick off the meal with 'God Bless the Cook'  -- my sister Mary Williams owns a catering company in Orange County that is aptly named Bless the Cook -- below is her recipe for a delicious carrot cake and we are also offering it on our Take Out menu.  You can view here.  If you are in her geographic area of Southern Orange County (Mission Viejo) California, you can write her at blessthecookcatering@hotmail.com or follow her on instagram @blessthecookcatering.  Enjoy!

CARROT CAKE BREAD

 Ingredients

 2 cups flour

2 teaspoons baking soda

2 teaspoons cinnamon

½ teaspoon salt

1 cup raisins

½ cup flaked or grated coconut

½ cup chopped walnuts

1 cup applesauce

2 teaspoons vanilla

2 cups grated raw carrots

3 eggs

 

Instructions

 

Preheat oven to 350 degrees.

 

Spray with baking spray (or grease/flour) a 9” x 5” x 3” loaf pan.

 

In a large mixing bowl, whisk together flour, baking soda, cinnamon & salt.

 

Add raisins, coconut and walnuts, and stir to combine well.

 

Whisk eggs in separate, medium bowl.

 

Add grated carrots, applesauce & vanilla to eggs.

 

Incorporate dry ingredients with wet until well mixed.

 

Pour batter into prepared loaf pan.

 

Bake 60 minutes or until a toothpick comes out clean.

Sunday Thoughts -- March 22, 2020

A good samaritan and client in our Greenwich community called and ordered 40 meals for First Responders from a different restaurant each day last week to help the restaurants and our First Responders.  Anyone can do this with a group of friends in their community.  

We are closed today Sunday, March 22 and open again tomorrow.

What a week.  Hope you are well and sheltering at home.  I am writing you from my home in Belvedere, California where I have been sheltering with my family for just under a week.  We are allowed to go out and exercise, walk our dog and get our groceries but careful to keep our distance at all times so we are really ok.  It is so important we all follow the guidelines for the collective health of our communities.  At The Perfect Provenance, we are taking the safety of our employees and clients very seriously and taking every precaution.  We have a very small staff working in our Cafe 47 -- 2 people -- for Take Out & Delivery and our managers Victoria & Tiffany alternating to take orders and fill online shopping.  Everyone is wearing masks and gloves and because we are in a home -- they are separated at all times.  Although things are very difficult right now, I do believe the country is mobilizing and will turn a corner in the next week.  We must all do our part in keeping each other safe.  Please see below for our new Cafe 47 Hours & Updated Take Out Menu.

Here are just a few thoughts --

Over the past week, I have spoken to several friends who are also small business owners and we have shared our experiences and ideas for survival in this challenging time.  Here is what I am proposing:
 --- support one small business locally this week if you are able by buying a gift card $25 or more; every dollar helps; post the card on social media to help spread the word
-- share good news on social media; panic is contagious; the calmer we are the quicker we can act to solve the problems that we face
-- share information about jobs that are available; people will be reinventing themselves in the short term; Linkedin is listing new jobs being done from home
-- order take out or flowers for a nursing home or hospital; call ahead to make sure they allow delivery; florists are really suffering right now, we could all use some beauty in our lives -- in Greenwich I love Green of Greenwich; in Marin -- Mill Valley Flowers.  Tell them we sent you!

Finally, be kind to the grocery store employees -- panic is causing people to lose their minds and their manners.  They are working overtime.  We can do this. Thank you for all your support thus far, we had placed many orders for Spring merchandise that continues to arrive daily and is getting put on our website, you can check or call us if you are looking for something in particular.  There are great deals everywhere online.  We are offering Click & Shop delivery in Greenwich or Curbside.
